Our Dining Philosophy

Look, we're not gonna throw fancy words at you about "farm-to-table" or "locally-sourced" – though yeah, we do all that. What really matters is this: we cook food that tells a story. Every dish has roots in Vancouver's rich culinary heritage, but we're not stuck in the past.

Our kitchen team's spent years perfecting recipes that honor traditional techniques while adding their own creative twist. Sometimes that means aging beef for 45 days. Other times it's about finding the perfect wild mushrooms from the BC forests. And honestly? We've scrapped dishes that didn't work, no matter how good they looked on paper.

The wine cellar downstairs? That's been our obsession for over two decades. We've got bottles you won't find anywhere else in the city, and our sommeliers actually enjoy explaining why a specific pairing works – without making you feel like you need a degree to understand it.

Trained in Lyon, worked in Michelin kitchens across Europe, but came back to Vancouver because – let's be honest – this is where the real ingredients are. Been running our kitchen for 8 years and still gets excited about a perfect sear.

Sofia's desserts have made grown adults cry (in a good way). She's half-Japanese, half-Italian, and somehow combines both traditions into pastries that shouldn't work but absolutely do. Her chocolate soufflé is legendary around here.

Don't let the formal title fool you – Thomas is probably the most down-to-earth wine expert you'll meet. He's spent 15 years curating our cellar and can pair wine with literally anything. Yes, even that weird dish you're thinking of.

The Wine Cellar

Two floors below the restaurant sits our pride and joy – over 3,000 bottles from around the world. We've got everything from affordable gems to bottles that cost more than most people's car payments.

The collection leans heavily on BC wines (supporting local isn't just a slogan for us), but we've also got incredible selections from France, Italy, Spain, and some unexpected finds from places like Oregon and New Zealand.

Thomas and his team offer wine cellar tours on weekends – you'll get to see bottles from the 1960s and hear stories about how we tracked down some of these rare finds. Plus, you might get to taste something special if you're lucky.

Private Dining & Special Events

Planning something special? We've got a private dining room that seats up to 16 guests, perfect for anniversaries, business dinners, or that birthday where you actually want good food. Chef Marcel can work with you to create a custom menu, and Thomas will put together a wine pairing that'll impress even your pickiest friends.
